Why do high-ratings users only add 1 point when winning the game, while low-ratings users add more than a dozen points when winning the game? This is unfair!

That's just about how stable your rating is. Check rating deviation.

You're confused. The amount of points you get is based on the difference between you and your opponent's rating. A 2200 that beats a 900 doesn't deserve any points for that win, whereas if it's the other way around the 900 deserves lots of points. Make sense?

Weaker opponents will have many chances to lose but if he wins it will be improvement so it will adjust the rating to it's skill plus weaker ones get black so according to Lichess updates they will add more rating gain to black accounting white's first move advantage.
