It's true that Youtube has tons of videos with Lichess board and pieces. Nonetheless, they can win any law suit against chess.com cause they are disgutingly rich. And a good lawyer is something I cannot afford, so I need to be sure.

I think you'll want to look at the copyright of the piece sets themselves, for example:

It uses the GNU Free Documentation License (GFDL). I am certainly not a lawyer, but it probably means that if you use these pieces, you may have to offer your book under the same license, as a "combined work." (That's usually how it works with GNU and other copylelft licenses.) But it may depend on how you render it, whether you're using images or just specifying the "font."

You've already been referred to the licenses for many of the piece sets. Some of them will be more permissive, but you're probably not going to have a lot of assurance in the absence of lawyers and court decisions.

Why Lichess cannot speak for the piece authors? You talk like you were part of the Lichess Team, are you one of them?
Otherwise, how do you know they cannot speak about it? Besides, I only started a new topic cause I wanted someone from LICHESS TEAM to see it. I'd love to forward the question directly to them, but I can't seem to find a way.

Because Lichess isn't a copyright holder of the pieces.

Would still recommend to be careful about pieces and boards. There are many good set's so you are likely to find one that fit's whatever licenses you are looking for.
