dxe5 is not a mistake, the mistake occurred when Qxd8 happened
this is because white should not trade especially when he is up material
by taking the pawn on f5 you just help black developing his bad bishop and free his rook, so allowing for more active pieces w/o any reason.
Instead you can get a tempo for free by Bg5, still having his bishop on c8 and either forcing black to move his knight on e7 or the queen to d7, allowing Qe1 after dxe5.

You probably mean "up in development and king safety"? Material seems equal.
