For white, I think that the best opening is the king's pawn opening (E4). When you play the king's pawn opening as the first move. You get to control 2 squares (D5 and F5). This prevents developing in these squares.
White can also do Knight C3 and then pawn D5. Knight C3 protects the central pawn (E4) from being captured. So the move C3 is basically for support.
Pawn to D5 blocks black to play C5 and E5 because if like a knight goes to any of the squares, (C5 and E5).
White's pawn in D5 will be able to captured it.
This makes overall the King's pawn opening one of the best gambits to play.
For black: Black is second to play so the gambit depends on what white plays. If white plays D4. Play D5, then white will play C4 and then do the queens gambit not accepted which is E3 then continue your game!
But this gambit that I'll be mostly talking about for black is the Sicilian Dragon, it is a deadly opening for white.
The first move for white is E4, then you play the regular Sicilian which is c5 (for black). Then white plays Nf3 then black plays D6. Then white plays D4. Then you play cxd4. Then white plays Nxd4. Then white plays Nf6, then white plays Nc3. Then black plays g6. When you see it closely. It will turn into a Dragon. This is a strong gambit because you have control over most squares.
My friend taught me about the Sicilian Dragon opening in me and his class. (His name is @SABHTimothyT) I then played against @RicoHe which has way more rating then me. But since I used this opening it worked.

Conclusion: The best gambit for white is the King's pawn gambit and for black it is the Sicilian Dragon.
